LJ's Rollatini 🌾🌱

Created when we set out to build a vegan dish that didn’t feel like a compromise, the Lj Rollatini was inspired by a favorite of Melissa’s friendβ€”eggplant Rollatini. Chef Sal reimagined it with a house-made cashew ricotta, keeping the comfort while making it fully plant-based. Familiar, satisfying, and done our way.
