Deep Sea SO—our “deep sea sell out”—started as a joke when we convinced Chef Sal to put salmon on the menu, something he swore he’d never do. Of course, he couldn’t leave it alone, so he made it his own. What began as a compromise turned into a standout, done the only way we know how.
