Emotional Support Potatoes

During our first year, when the kitchen was nonstop, one of our servers would come to Chef Sal asking for “emotional support” and a quick bite to keep going. She’d grab a potato off the line between tables, and it became her go-to. That’s how our Emotional Support Potatoes were born.
